banana granola


this is a great sugar-free, GF breakfast option topped with fruit, berries, on yogurt, or however you enjoy your granola

It all started with a dream to open a restaurant which then led to the publishing of this recipe blog.

the SWEETENERS.

This granola is sweetened with bananas, and a little honey and vanilla extract. It's not super sweet, but that doesn't mean it's not delicious. You can increase the amount of honey in this recipe if it's not sweet enough for you.

the other ingredients.

Besides oats, which are the main ingredient in granola, granola usually has nuts and seeds. You can use any nuts and/or seeds that you like best; I use pecans and sunflower seeds. You can go without the nuts and seeds, but you may need to add an extra cup of oats. The coriander and cinnamon are just an added flavor, and the salt helps bring out the sweetness of the bananas. The coconut oil helps the granola to stick together.

MAKES 8 CUPS

ingredients:

4 cups old fashioned rolled oats

1 cup quick oats

1 cup chopped pecans (or other nuts of choice)

1 cup sunflower seeds (or other seeds of choice)

1/2 tsp coriander

1/2 tsp cinnamon

1/4 tsp salt

2 medium ripe bananas, mashed

1 tbsp coconut oil, melted

1 tsp honey, or maple syrup

1 tsp vanilla extract


directions:

preheat oven to 225 degrees F

mix together mashed bananas, coconut oil, honey, and vanilla in a small bowl

in a large bowl, toss rolled and quick oats, nuts, seeds, coriander, cinnamon and salt

add banana mixture to dry ingredients and mix with clean hands until well combined. it should stick together when pressed between fingers

divide granola mixture into two baking sheets and spread evenly

bake for 30 minutes. toss granola, and bake for another 30 minutes
